11. Summary of the new findings of the thesis

- The thesis used the second experimental design method to find the optimal conditions for the liquid chromatographic separation to simultaneous determination of six anthocyanins and six anthocyanidins. These results were more optimal than those published using univariate methods. Simultaneous determination of both anthocyanins and anthocyanidins allows identification and quantification of both forms in a running time which helps to evaluate the hydrolysis recovery. Therefore, quantitative results were accuracy.

- The separation and extraction of anthocyanidin in vegetables, tubers and fruits were optimized using the second experimental design method. The results of the study show that the optimal conditions of the sample preparation when evaluating the simultaneous and reciprocal influence of the factors.

12. Practical applicability, if any:

- The optimal parameters of the HPLC-DAD for simultaneous determination of anthocyanins and anthocyanidins will be applied in laboratories which evalute recovery of extraction and hydrolysis for each specific sample matrix. It especially is useful when the standards source anthocyanins are not available.

- 31 kinds of vegetable, tuber and fruits have identified and quantified anthocyanidin. The study preliminary evaluated antioxidant activity of some food samples. From those results, manufactures can select raw materials with high anthocyanin content and biological activity.

- MS/MS data of anthocyanins and anthocyanidins contributes to providing more data for the spectral library to be applied for further studies.

13. Further research directions, if any

- Developing liquid chromatography tandem mass spectrometry (LC-MS) method to identify anthocyanin types in the vegetables, roots and fruits matrices.

- Studying the extraction and separation process to collect anthocyanin pigments from plants

- Assess the relationship between anthocyanidin ingredients, anthocyanidin content and antioxidant activity.
